I Do This If I Need A Filler for Dinner Quickly. (This is Also Great for Breakfast with A Couple of Fried Eggs Laying On The Top and A Side of Grits!) I Dare Ya to Try It with Eggs!
Ingredients:
6 medium - large baking potatoes or reds (both are yummy)
1 large sweet yellow onion (chopped)
2 slices of bacon
2 cloves of garlic crushed
dash of paprika and parsley
salt & pepper to taste
Directions:
1. Wash Potaoes and Stab A Few Times with A Knife, Lay Them Around A Microwave Plate and Cook On High for 5 Minutes - Flip Them Over and Cook Them for Another 5 Minutes.
2. While the Potatoes Are Cooking, Cut The 2 Slices of Bacon Into Smaller Bite Size Pieces and Chop The Onion and Saute the 2 Together On Medium High, When the Onions Start to Turn Transparent, Add the Crushed Garlic and Continue Cooking Until The Onions Have Browned. They Are Now Done)
3. Okay The Potatoes Should Be Done Now...Toss The Onions, Bacon and Garlic...Including Pan Drippings(The Bacon Grease) Into The Potatoes and Toss. Then Add Paprika, Parsley, Salt & Pepper and SERVE!!!
