I made this to go with grilled pork chops and green beans and it was sheer perfection. I ate on it for four days. Ingredients:
3 -4 large potatoes, cooked and sliced |
salt and pepper |
1 cup shredded monterey jack cheese |
1 cup shredded cheddar cheese |
3 tablespoons butter |
1 cup chopped onion |
1 cup sour cream |
2 eggs |
paprika |
Directions:
1. Saute onions in butter until golden. 2. In a deep, oiled casserole dish, layer 1/2 potatoes (sprinkle with salt and pepper), 1/2 onions and 1/2 jack and cheddar cheeses. Repeat layers. 3. Beat sour cream and eggs. Pour over top. Sprinkle with paprika. 4. Bake at 375 for 40 minutes. |
