This dish is great for those who love cheese and a little heat ...From Southern Living Ingredients:
3 tbls.butter |
3 tbls. flour |
2 cups milk |
1 pkg. shredded mexican cheese, divided (8oz.) |
1 jar diced pimento (2 oz.) |
1 can chopped green chiles, drained (4.5 oz.) |
2 tbls. pickled jalapenos, finely chopped |
1/2 tsp. salt |
2 lbs. baking potatoes, peeled and sliced to 1/4 inch rings |
Directions:
1. Preheat oven to 350 2. Melt butter over low heat in med. saucepan 3. Whisk in flour until smooth 4. Cook, whisking constantly, for one minute 5. Gradually add milk and cook over medium heat, whisking constantly until thickened 6. Stir in 1 1/2 cups cheese 7. Remove from heat and stir until cheese melts 8. Add pimento, chiles, jalapeno and salt, and mix well 9. Put half of potato slices in lightly greased 2 qt. baking dish 10. Top with half of cheese mixture 11. Repeat layers 12. Cover and bake 20 minutes 13. Uncover and bake 40 minutes 14. Sprinkle remaining cheese over top last 5 minutes of baking |
