Whenever I make this, I need to triple the recipe for family to take home. I never make traditional mashed potatoes any more. I never measure anything so please make these to taste. Ingredients:
3 lbs of potatoes, i use baking because of the low moisture. |
1/2 lb of bacon (please, no low salt or fake bacon-just go for it) |
1/2 small head of green cabbage. |
2-3 scallion finely chopped |
3/4 c. light cream |
salt, pepper |
1 stick of butter |
Directions:
1. Cook bacon until crisp-crumble; put aside 2. Make mashed potatoes in whichever way you make them add the cream and some butter-keep warm 3. Shred the cabbage and saute in the butter until limp. Use as much butter as needed 4. Saute the scallion until tender (save a little for sprinkling on top of finished potatoes 5. When everything is cooked mix all together 6. Put in a casserole dish-make three small wells and place a tsp. of butter in each add the reserved scallion to each well. 7. Keep warm in the oven. |
