Potatoes Au Gratin

Ingredients:
4 cups thinly sliced potatoes (about 4 to 5 medium)
1/2 lb velveeta processed cheese, cut up
1/2 cup chopped onion
1 teaspoon dry mustard
1/4 teaspoon pepper
Directions:
1. COOK potatoes in boiling water 18 minutes or until barely tender;.
2. drain.
3. TOSS potatoes and remaining ingredients in 2-quart casserole; cover.
4. BAKE at 350°F for 20 to 22 minutes or until potatoes are tender.
5. Stir before serving.
6. VARIATION: Add 1 cup chopped ham with remaining ingredients.
