Cubed potatoes over onions, mushrooms and celery. For an extra zip sprinkle vegan Parmesan cheese and oregano on top of the dish! Ingredients:
3 potatoes, cubed |
1/4 cup fat free italian-style dressing |
2 cups fresh sliced mushrooms |
1 onion, finely diced |
2 stalks celery, chopped |
Directions:
1. Place potatoes in a pot of boiling water until tender. Drain well. 2. Spray a frying pan with non-stick cooking spray and pour in dressing. Over a medium heat fry the mushrooms, onions and celery. When cooked to your desired texture pour the mixture over the potatoes. Serve hot. |
