Yummy, easy, fast and even healthy! I'm amazed at the nutrition difference between using real eggs and Egg Beaters- still good protein without the fat/cholesterol. Of course, I used real butter and cheese- oh well. I think it's a great combination. Ingredients:
1 cup egg beaters egg substitute |
1/2 cup skim milk |
1/2 teaspoon lawry's seasoned salt |
1/2 teaspoon pepper |
1/2 cup swiss cheese, grated |
1/2 cup cheddar cheese, sharp, grated |
2 cups simply potatoes diced potatoes with onion |
2 tablespoons butter, unsalted |
Directions:
1. preheat oven to 350. 2. melt butter in 9X13 pan and swirl. 3. distribute potatoes evenly. 4. top evenly with swiss and cheddar cheeses. 5. mix egg-beaters, milk, pepper and season salt. 6. pour over eggs and cheese. 7. bake at 350 for about 30 minutes. |
