This dish is named for the Alsace region of France, a belt of land that is steeped in both French & German tradition and fare. My version of this dish has been modified to fit my heart-healthy diet. Ingredients:
2 slices turkey bacon, chopped |
1 lb potato |
1/4 cup shallot, coarsely chopped |
2 tablespoons butter |
1 tablespoon olive oil |
1/4 tablespoon fresh tarragon, chopped |
1/4 tablespoon fresh thyme leave, chopped |
1/4 tablespoon fresh parsley, chopped |
Directions:
1. Peel potatoes and cut into 1 inch cubes. 2. Place in pot & cover with salted water. Bring to boil & cook 5 minutes. Drain and set aside. 3. Melt margarine in skillet. Add olive oil, onions and bacon. Cook 5 minutes. 4. Add potatoes. Cook 10 minutes until tender and crisp. 5. Add herbs, salt and pepper. Mix well. |
