Potatoe Latkes is like the all time comfort side dish. Serve with some sour cream & chives, smoke salmon and mesclun salad and you have a quick and light meal. Ingredients:
5 large yukon gold potatoes, peeled and soaked in water |
2 onions, grated and drain on paper towels |
2 eggs, lightly beaten |
1/2 cup all purpose flour |
1 tsp baking powder |
salt and pepper to taste |
vegetable oil, for frying |
chives |
sour cream |
Directions:
1. Remove potatoes from water, dry and shred them in food processor or medium side of box grater. 2. Place in bowl with remaining ingredients. Stir to combine. Allow 5 minutes for resting. 3. Heat oil in a large frying pan over medium-high heat. 4. Carefully drop heaping tablespoonfuls of potato mixture into hot oil, pressing them down lightly with the back of a spoon to form pancakes. 5. Fry until golden brown, flip and continue frying until brown. 6. Remove and drain on paper towels. 7. Serve with sour cream and chives. |
