This hearty and savoury soup really hits the spot. Serve with some bread and salad for a meal. Ingredients:
4 medium yukon gold potatoes, peeled and diced |
1 c broccoli florets |
1 yellow onion, diced |
1 clove garlic |
2 c chicken stock |
1/2 c milk |
1 tbsp olive oil |
1 1/2 c water |
1 tsp thyme |
salt |
pepper |
Directions:
1. Heat oil and saute onions and garlic. 2. Add chicken stock, water and potatoes. 3. Bring to boil and simmer for 10 mins. 4. Add broccoli, thyme and milk and cook for another 5 mins. 5. Salt and pepper to taste. Cool soup. 6. Puree in blender and serve. |
