Most of what I cook has been made by process of serendipity lol. I either make do with what I have in my pantry or I discover a taste and wonder what it would taste like on something else. Sometimes its touch and go because I dont taste what I make until its done. Read more . Very risky, yes, I know lol Ingredients:
500g new potatoes |
1 boquet garni |
200ml extra virgin olive oil |
4 large bell peppers |
2 jalapeno chillies, deseeded and chopped |
200ml lemon juice |
salt to taste |
crushed black peppercorns |
grated mozzarella |
Directions:
1. boil potatoes (unpeeled) in a large saucepan with salted water and the boquet garni 2. core the bell peppers and place in a hot oven for 15 minutes 3. remove from the oven and peel, allow to rest 4. in a mixing bowl, mix the chillies, lemon juice salt and peppercorns 5. remove and drain potatoes 6. cut the baked bell peppers in half and set aside 7. roll the boiled potatoes in the chilli mixture and wrap with half a bell pepper. 8. repeat until all the ingredients are used 9. place wrapped potatoes in a baking tray and cover with the grated mozzarella 10. pour the remaining mixture over the cheese and grill until melted 11. serve with any main of your choice |
