Being married to an Idaho boy, we eat potatoes a lot and I am constantly searching for ways to use up the huge boxes of potatoes his family sends us. Luckily, after all these years, I remembered when I was living in California I went to dinner at someones house where they were using the leftover mashed potatoes rolled up in tortillas for dinner. Thus the inspiration for this recipe! Ingredients:
4 medium sized potatoes |
1 (1 1/8 ounce) package cheesy taco seasoning mix |
1/2 cup cheese, of choice |
4 tortillas |
Directions:
1. Boil potatoes until done, drain the water, and mash the potatoes together with the seasoning mix. 2. Spread the potatoes over the tortillas with the cheese. 3. Enjoy! |
