This is a *very* quick and easy meal that I make all the time for my family. I love that it is a one pan meal. Basically you just heat everything up (a bag of frozen potatoes, and 2 cans of beans and corn- what could be easier!) And it is delicious and my family loves it! Ingredients:
1 tablespoon vegetable oil |
15 ounces potatoes, o'brien, frozen, prepared |
10 ounces black beans, drained |
10 ounces mexicorn |
8 flour tortillas |
1 ounce mozzerella cheese |
1 ounce cheddar cheese |
1 cup salsa |
1/2 cup light sour cream |
Directions:
1. Heat oil in 10-inch nonstick skillet; add potatoes. Cook over medium heat, stirring occasionally, until potatoes are tender and begin to brown (6-8 minutes). 2. Stir in beans and corn. Continue cooking until heated through. (1-2 minutes) 3. Top each warm tortilla (micro for 20 sec.) with about 1/2 cup potato mixture, 1 tablespoon cheese (mix two together), 2 tablespoons salsa, and 1 tablespoon sour cream. 4. Roll up. |
