Potato Tomato And Onion Casserole |

Simple casserole made with staple ingredients that just about everybody has.This is a recipe from MaryAnn Esposito. Ingredients:
2tbs olive oil |
2lg. russet potatoes,peeled and cut into thin rounds |
6lg. plum or beefsteak tomatoes,thinly sliced |
salt to taste |
1c grated pecorino romano cheese |
2tbs minced fresh marjoram leaves |
1/2c dry white wine such as pinot grigio |
2 med. red onins,cut into thin rounds. |
Directions:
1. Preheat oven to 375 2. Brush olive oil on a 9x13 casserole dish. Starting with the potatoes,make three alternating layers of potatoes,tomatoes and onions. Sprinkle each layer with salt and 1/3c cheese and marjoram 3. Pour wine carefully into dish on one side. Cover with foil and bake 25-30 mins. Uncover the dish and continue baking till the top is nicely browned. |
