Just in time for Thanksgiving, this stuffing will surprise your guests. Looks like a standard sausage stuffing but has that wonderful stuffing flavor with a deep potato taste. Ingredients:
3 pounds red potatoes, cooked, drained and chopped (skins left on)
3 cups seasoned bread cubes
2 cups chicken stock
1 cup red onion, finely chopped
1 red bell pepper, finely chopped
3 3/4 cups celery, finely chopped
1/4 cup fresh parsley, chopped
3 garlic cloves, chopped
6 egg whites
1 teaspoon poultry seasoning
1 teaspoon pepper
Directions:
1. Preheat oven to 350 degrees F and lightly grease a 13x9” baking dish.
2. In a large bowl, combine all items, mix well.
3. Transfer to the baking dish and bake uncovered for 35 to 40 minutes.
