Just in time for Thanksgiving, this stuffing will surprise your guests. Looks like a standard sausage stuffing but has that wonderful stuffing flavor with a deep potato taste. 3 pounds red potatoes, cooked, drained and chopped (skins left on) |
3 cups seasoned bread cubes |
2 cups chicken stock |
1 cup red onion, finely chopped |
1 red bell pepper, finely chopped |
3 3/4 cups celery, finely chopped |
1/4 cup fresh parsley, chopped |
3 garlic cloves, chopped |
6 egg whites |
1 teaspoon poultry seasoning |
1 teaspoon pepper |
Directions:
1. Preheat oven to 350 degrees F and lightly grease a 13x9” baking dish. 2. In a large bowl, combine all items, mix well. 3. Transfer to the baking dish and bake uncovered for 35 to 40 minutes. |
