A masala dosa/crepe is made by stuffing cooked filling of potatoes, fried onions and spices. It wraps the dosa around a onion and potato curry.
Ingredients:
filling
4 large potatoes , cooked , cold and mashed into lumps
1 carrot , cubed and cooked along with 1/2 c peas and drained
4 green chillies , chopped
1-inch piece ginger, grated
2 large onions , chopped
1/2 tsp ground turmeric
1 /2 tbsp corriander leaves , finely chopped
salt
temper
1 tsp mustard seeds
1 tsp channa dal
1 tbsp curry leaves , finely chopped
for the outer skin

Directions:
1. Fry the onions , ginger and green chillies .
2. Add the potatoes , mix well .
3. Add the carrot and peas .
4. Check the salt and add tumeric .
5. Temper in a separate pan along with corriander leaves and add to the above .

7. For the outer skin ....
8. Grease a pan .
9. Pour a spoonful of batter in the middle and swirl it .
10. Once cooked ( 1 min ) , flip and spread 3 tbsp of filling in the middle .
11. Once cooked , cover on both sides ( see the picture ) .

13. SERVE WITH SAMBAR AND COCONUT CHUTNEY
