A stew with potatoes. A really tasty, spicy dish. A substitute for potato wedges. Goes fine with rotis, pooris, bread and buns Ingredients:
potato - 1/2 kg |
onion - 3 |
ginger - 1 inch piece |
salt - as required |
sugar - if required |
grated coconut - 1 cup |
oil - 2 tbsp |
green chillies - 8 |
Directions:
1. Chop the onions finely. 2. Grind garlic and ginger to a fine paste. 3. Boil potatoes with water for 20 minutes. Peel the skin and mash it coarsely with salt. 4. Grind the grated coconut with water. Filter the syrup and keep aside. 5. (Do the 4th step, thrice) 6. Fry chopped onions in oil. Add ginger, garlic paste. Fry till the fresh smell of the garlic disappears. 7. Add the mashed potatoes. Add the third coconut milk. Allow till the first boil comes. 8. Now add the second coconut milk. Allow to boil for seven or eight minutes. 9. Turn off the flame. Now add the first coconut milk. 10. Spread cilantro for garnish. |
