Incredible appetizer to serve at parties, showers, cookouts. I never have any left when I serve these. Greatness in this recipe. Ingredients:
4 potatoes peeled boiled and mashed |
10 ounce package frozen chopped spinach thawed and well drained |
2 eggs |
1/4 teaspoon nutmeg |
1/4 teaspoon cayenne pepper |
1 cup grated pepper jack cheese |
1/2 cup flour |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
cooking spray |
Directions:
1. Lightly brush a baking tray with vegetable oil or cooking spray then set aside. 2. In medium bowl combine potatoes, spinach and eggs then beat with mixer until well-blended. 3. Season with nutmeg and cayenne pepper then add cheese and 4 tablespoons of the flour. 4. Stir until flour is well-blended. 5. Spread remaining flour onto a glass plate and season with salt and pepper. 6. Using two teaspoons form spinach mixture into 1-inch balls. 7. Drop spinach balls onto the flour covered plate. 8. Roll balls in the flour to coat and place on the prepared baking sheet. 9. Place the tray in the refrigerator for 20 minutes before baking. 10. Preheat oven to 450. 11. Remove balls from refrigerator and spray lightly with cooking spray and bake 14 minutes. |
