This is an adaptation of a delicious recipe my sister gave to me. It is wonderful to make for friends and family, especially when they're sick! It's the ideal comfort food! You can lighten it up or make it thick and hearty! Read more ! You'll love it! Ingredients:
1/4 cup butter or margarine |
1 large yellow onion, peeled and chopped |
2 garlic cloves, minced |
1 1/2 pounds of white potatoes, diced |
7 1/2 cups of hot chicken broth or stock |
sea salt |
black pepper |
milk (opt) |
chives (opt) |
shredded cheddar cheese (opt) |
dollop sour cream (opt) |
hot pepper sauce (opt) |
Directions:
1. Melt margarine in large pot over medium heat 2. Add onions, turning to coat. 3. Cover and let sweat 8 minutes. 4. Add garlic, stir to mix 5. Cover and sweat another 1-2 minutes 6. Add potatoes and mix with onion mixture 7. Season with salt and pepper 8. Cover and cook (without allowing too much color to potatoes) over gentle heat for about 10 minutes. 9. Add hot stock 10. Bring to a boil and simmer 25 minutes until veggies are tender 11. Remove from heat and allow to cool slightly 12. Puree the soup in batches in blender 13. Reheat soup in pot, over low heat, to adjust seasonings. 14. Add milk and additional garnishes and enjoy! |
