Basic potato soup. Salted butter or oil and salt is required to coat the potatoes so they will not break down and get mushy. Rinsing potatoes after they are cut helps the soup not become too thick. Ingredients:
4 tbs butter, salted |
1 onion, medium, diced |
2 1/2 lbs potatoes, peeled and diced |
2 cups milk, 1 |
2 cups water |
1 egg, slightly beaten |
1 cup flour |
1 salt and pepper to taste |
Directions:
1. Over medium heat, melt butter in pot. Add onion and cook until softened. Add potatoes and coat in butter. Add milk and water. Bring to a boil. Reduce heat to low and simmer for 15 minutes or until potatoes are cooked through. Mix egg and flour to make dough. Drop pea sized bits of dough into soup and simmer for another 5 minutes. Serves 6 |
