another potato soup recipe, but this one is for just 2 people. Ingredients:
2 medium potatoes, pared and diced |
2 slices onions |
1 teaspoon salt |
1 cup hot milk |
1 dash pepper |
1 stalk celery, sliced very fine |
1/3 cup water |
Directions:
1. combine potatoes, onion and salt in a saucepan. 2. add boiling water. 3. cover and cook until potatoes are tender. 4. do not drain. 5. mash potatoes with a fork. 6. add milk, pepper and celery. 7. more milk may be added if soup is too thick. 8. serve hot. |
