I got this from my grandma's church cookbook. Wonderfully delicious potato soup with a little bit of green veggies, cheese and meat - so everyone is happy! YUMMY!!!!!!!!!!!! Ingredients:
8 -10 potatoes, cut into chunks |
1/2 small onion, chopped |
1 (12 ounce) can evaporated milk |
1 (16 ounce) bag broccoli florets |
2 lbs smoked sausage, sliced and quartered |
1 lb velveeta cheese, cut into cubes |
Directions:
1. In pot, cover potatoes and onion with water, bring to a boil and cook until almost done. Add broccoli and cook til tender. Drain off 1/2 of the water (or more if you like a thicker soup like we do). Remove from heat. Add evaporated milk, sausage and cheese. Stir until cheese is melted. |
