There are a lot of potato soup recipes...but each one brings something different. So...the more the merrier. Ingredients:
2 cups diced potatoes |
3/4 cup celery |
3/4 cup carrot |
3/4 cup onion |
2 garlic cloves |
1 1/2 cups diced ham |
2 tablespoons margarine |
3 tablespoons flour |
4 cups chicken broth |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 3/4 teaspoons cajun seasoning |
3/4 cup milk |
1 cup cheddar cheese (for garnishing) |
Directions:
1. Melt margarine in large saucepan. Add potatoes, celery, onion, carrots, garlic, and diced ham; saute for 15 minutes at medium high heat. 2. Add flour. Cook for an additional minute, stirring constantly. Add the chicken broth. Reduce heat to medium, and allow to simmer for 30 minutes. 3. Add pepper, salt, and Cajun seasoning. Allow to simmer 5 minutes. Add milk. Allow to cook for 2 minutes. 4. Serve. Garnish with cheese. |
