This recipe is from an ancient cookbook, all darkly-aged pages falling out. It is so simple, you might pass it up, but it's big on looks if you like to do something a bit unusual. Ingredients:
large white potatoes, one per person |
salt & pepper |
garlic or onion powder (optional |
melted butter (optional) |
Directions:
1. [this is exactly the way the recipe appears in the book, not like we do it today] 2. Choose large white potatoes, as free from spots as possible; boil them in their skin in salt and water until perfectly tender, drain and dry them thoroughly by the side of the fire, and peel them. Put a hot dish before the fire, rub the potatoes though a coarse sieve on to this dish; do not touch them afterwards, or the flakes will fall, and serve as hot as possible. 3. NOTES From Me: 4. if you boil the taters with some garlic and/or onion powder, it will give them a marvelous flavor cooked-in that is much better than trying to add it afterwards. 5. The melted butter can be drizzled on top after serving them for more flavor. 6. Serve them with 2 forks to keep them fluffy. |
