3 medium potatoes |
1/2 tablespoon vegetable or olive oil |
1/2 cheddar cheese |
1/3 chopped black olives |
1/2 cup tomatoes, diced |
1 tablespoon chopped green onions |
1/3 sour cream |
1/4 packet taco seasoning |
1/2 cup guacamole |
1/2 cup refried beans |
Directions:
1. Lightly baste vegetable oil on thin strips of potato, with skins attached. Preheat oven to 350 degrees and bake until browned. In a bowl, combine chopped green onions, low fat sour cream, taco seasoning, and refried beans. Top potatoes, with refried beans mixture and sprinkle with shredded cheese, black olives, tomatoes, and guacamole. |
