Potato Scones

Also known as Tattie Scones. A traditional scottish breakfast treat. Great served with bacon and eggs.
Ingredients:
1 cup warm mashed potatoes
1/3 cup melted butter
1 teaspoon salt
1/2 cup flour
Directions:
1. Mix together all ingredients until throoughly blended.
2. Turn the dough onto a floured board and divide into three.
3. Roll into a circle about 1/4 inch thick.
4. Cut each circle into 6 wedges.
5. Preheat a frying pan or griddle over moderate heat. Cast iron works great.
6. Sprinkle the griddle with flour and cook each circle for about 5 minutes, until the edges begin to brown turning once to cook both sides.
