Taken from 'The Complete Dieter' - 596 cals for 4, 149 cals for 1 - Just the sort of food a carbonholic drools over, go easy on the butter though, please. It's easier to make 4 portions at a time, either share them or freeze some, but don't succumb to the temptation to eat all of them at once - Variation : Leave out cottage cheese, and blend a large raw onion with salt, pepper, nutmeg, fresh herbs; then add flour and potato. Add a little bran if mixture seems too soft. Ingredients:
450 g potatoes |
115 g cottage cheese (either plain or with onions and peppers or chives) |
1 egg (size 4) |
salt, black pepper |
1 tablespoon flour (wholewheat self-raising) |
Directions:
1. Cook the potatoes with their skins on, drain well and then mash. Add all the other ingrediens, and mix well, a blender is ideal. Form into patties and either cook on hot griddle (10 minutes) or in a medium oven for 20-30 minutes. Serve with grilled mushrooms and tomatoes, perhaps a portion of camembert, chicken or ham. |
