No full breakfast should be without these! Ingredients:
1 cup warm mashed potatoes |
1/3 cup melted butter |
1 teaspoon salt |
1/2 cup all-purpose flour (sieved) |
Directions:
1. Preheat a 12-inch seasoned cast-iron frying pan or griddle over moderate heat. 2. Mix together all ingredients until thoroughly blended. 3. Turn the doughout onto a floured board and divide into thirds. 4. Roll into a circleabout 1/4 inch thick. 5. Score each circle into 6 wedges. 6. Sprinkle the griddle with flour and bake each circle for about 5 minutes, until edges begin to brown, turning once to cook both sides. 7. Serve hot or cold. |
