Potato Salad With Smoked Turkey and Gruyere |

A tasty potato salad - I like it a little better without the turkey. The celery and apple are nice touches. Tastes better if allowed to sit overnight before serving. I think this is from Rachel Ray's magazine (?). Ingredients:
4 cups water |
1 lb red potatoes, quartered |
1/2 lb turkey breast, sliced |
6 ounces gruyere, diced |
3 celery ribs, diced |
3/4 cup mayonnaise |
1/4 cup fresh dill, chopped |
1 tablespoon dijon mustard |
1 granny smith apple, chopped |
Directions:
1. Boil potatoes until just tender, drain and cool. 2. Combine mayo, dill and dijon in a large bowl. 3. Add potatoes, turkey, cheese and celery; mix well. 4. Stir in apple. 5. Garnish with dill sprigs. |
