Potato Salad With Homemade Dressing |

This was the potato salad I grew up on, when our families would get together for picnics in the summer and every cook tried to out-do the other...you just can't beat the homemade dressing flavor. It takes a bit more work than throwing together some mayo and mustard, but it is so worth the effort. Ingredients:

2 eggs, well beaten |
1 cup (scant) sugar |
3/4 teaspoon salt |
1/2 teaspoon dry mustard |
1 tablespoon (heaping) flour |
1/2 cup cider vinegar |
3/4 cup water |
potato salad ingredients |
1/2 cup cooked dressing |
1 cup mayonnaise (do not use miracle whip) |
1 tablespoon (or to your taste) prepared mustard |
salt and pepper, to your taste |
6 potatoes, boiled until tender, drained well and diced |
4 radishes, very thinly sliced |
2 stalks celery, thinly sliced |
1 small onion, diced |
6 hard-boiled eggs, peeled and diced |
Directions:
1. Place all Cooked Dressing ingredients in a medium saucepan and bring to a gentle simmer; cook until sauce is thickened, stirring constantly. Cool completely and store in a glass container in the refrigerator - dressing will keep for up to a month. 2. To make the potato salad, add the mayonaisse, prepared mustard, salt and pepper to 1/2 cup of the cooked dressing. Prepare the other potato salad ingredients in a large bowl, and gently toss with the dressing mixture. Chill for several hours to allow the flavors to come together. |
