A new spin on German Potato Salad Ingredients:
6 medium potatoes |
4 slices bacon |
1 tablespoon onion, chopped |
2 stalks celery, diced |
1 teaspoon salt |
2 tablespoons butter |
2 tablespoons all-purpose flour |
1/2 teaspoon ground dry mustard |
1 tablespoon granulated sugar |
1 cup beer |
1/2 teaspoon hot pepper sauce |
2 tablespoons fresh parsley, minced |
Directions:
1. Cook potatoes in boiling salted water just until fork tender. 2. Cool slightly, peel and slice potatoes. 3. In skillet, fry bacon until crisp. 4. Crumble bacon and combine with onion, celery and salt. 5. In small saucepan, melt butter. Add flour and cook over medium heat, stirring constantly, for 1 minute. 6. Add dry mustard and sugar. 7. Slowly stir in beer and hot pepper sauce. 8. Bring to a boil, stirring constantly. 9. Pour over potatoes. Sprinkle with parsley and toss to coat 10. Let stand one hour. 11.
