Potato Salad Southern Style |

Add Smithfield-ham-and-cheese sandwiches on potato rolls along with icy cold Cokes makes for a great easy picnic on the OBX beaches. Ingredients:
3 hard-cooked egg yolks |
3/4 cup mayonnaise |
1 teaspoon yellow mustard |
3 tablespoons sweet pickle juice from a jar plus 4-6 sweet-pickle chips |
1 teaspoon salt |
1/4 teaspoon pepper |
1/8 teaspoon ground celery seed |
1 teaspoon sugar |
1/4 cup red onion (chopped) |
2 ribs celery (sliced thinly) |
5 redskin potatoes (boiled, peeled, cubed, slightly mashed) |
2 tablespoons flat leaf parsley (chopped) |
paprika |
Directions:
1. In a large bowl, mash egg yolks, incorporate into the mayonnaise. Add mustard, sweet pickle juice, salt, pepper, ground celery seeds and sugar. 2. Add onions, celery and potatoes; mix to desired consistency. 3. Divide potato salad among small paper cups or bowls; dust with paprika. Top each serving with a pickle chip |
