Ingredients:
1 cup potatoes, small sliced
1 tbsp lemon juice
2 tsp parsley
2 tsp mint
1 tbsp olive oil
1 tsp black pepper
2 spring onions
Directions:
1. Rinse and slice potatoes and cook in cold water for 10-12 minutes then drain.
2. Rinse in cold water and return to warm pot on stove to dry.
3. Cover the spices in the water in a small bowl and let them wake up.
4. Add the remaining ingredients and mix thoroughly
