a German based recipe for potato salad Ingredients:
salad |
spanish (red onion) finely chopped (can substitute green onions/scallions) |
2 hardboiled eggs, quartered |
4 dill gherkins, diced |
can of 4 bean mix, drained |
1 can whole corn kernels, drained |
potatoes, cooked until firm but not mushy |
fresh (if in season, lightly steamed) or canned asparagus, well drained |
dressing |
classic vinaigrette (oil and lemon/vinegar) |
(aside: a flavoured oil or vinegar might add some zest, maybe garlic oil and raspberry vinegar ) |
a really good mayonnaise dressing |
Directions:
1. METHOD 2. Mix dressing ingredients and set aside 3. Cook potatoes whole until firm, skin on. Large dice 4. Place onion and potato while still warm into bowl 5. Pour over dressing and allow to soak through the onion and potato mix 6. Cool 7. Add diced gherkin, corn, bean mix and mix through 8. Finally, add the mayonnaise and mix gently 9. Decorate with fresh herbs of choice 10. NOTE: 11. Can add smoked salmon or canned tuna to make a truly complete meal on it's own! 12. ENJOY! |
