Ingredients:
2 tablespoon(s) olive oil or canola oil |
1/2 cup(s) sugar |
2 whole(s) eggs for dressing |
1 teaspoon(s) dry mustard |
1 pinch(s) red pepper |
1/2 teaspoon(s) salt |
1/2 cup(s) vinegar |
1/2 cup(s) skim milk |
12 whole(s) red skinned potatoes skins on, cubed |
2 stalk(s) celery chopped |
1 whole(s) red bell pepper chopped |
1/2 whole(s) onion chopped |
3 whole(s) eggs hard boiled and chopped |
4 slice(s) bacon cooked until crispy then crumbled |
Directions:
1. Boil potatoes, set aside. In a small pan, mix oil and sugar together then beat in eggs. Add dry mustard, red pepper, salt, vinegar and bring to a boil. Remove from heat and add milk to make a sauce. Pour over potatoes. Top with celery, peppers, onions, hard boiled eggs and bacon and mix thoroughly. |
