The best potato salad Ingredients:
1 kg small waxy new potatoes |
200 g feta cheese |
250 g cherry tomatoes |
1/2 red onion |
1 cup of good, preferably home made, aoli |
Directions:
1. Scrub the potatoes, cut into 2 cm bits (they should be small enough that this means halving or quartering them) and boil until cooked. Leave to cool. 2. Quarter the tomatoes 3. Cut the feta into 1 cm cubes, or crumble it. 4. Slice the onion very thinly 5. Mix it all together with the aoli and leave for 1/2 an hour or so before serving. |
