This is a summertime staple around our house. It's so good with fried chicken or burgers. Ingredients:
8 red potatoes, peeled and cut into cubes |
1/3 cup sweet gherkins, chopped |
1/3 cup celery, chopped |
2 hard boiled eggs, chopped |
dash of juice from sweet gherkin jar |
1/2 tsp. onion powder |
1/4 c. prepared mustard |
1 1/2- 2 c. mayonaise, depending on taste |
salt and pepper to taste |
Directions:
1. Boil potatoes until fork tender. 2. Drain, put back in pot and cook on med to dissolve any remaining water. 3. Once cooled, put potatoes into a large bowl, mix remaining ingredients. 4. After well-blended chill for at least an hour before serving. |
