Another old-time favorite from Mom. I use powder spices and the kids always liked it better without the crunchy stuff but you don't lose any flavor. Ingredients:
6 medium potatoes |
3 hard boiled eggs |
1 c hellman's mayo |
1-1/2 tsp yellow mustard |
1/2 tsp celery salt |
1/2 tsp onion powder |
black pepper - to taste |
Directions:
1. Boil potatoes until soft, let cool and peel off skin.(we prefer no skins) 2. Cut cooled potatoes into cubes. 3. Chop Hard Boiled Eggs* 4. Mix together mayo, mustard and spices. 5. Combine potatoes, eggs and mayo mixture. 6. Chill and Serve. 7. *Hard Boiled Eggs: Put Cold Eggs in a Pan, Fill With Cold Water, Bring to a Boil Over Medium Heat, Reduce Heat, Cover and Let Simmer 15-20 minutes |
