If your looking for an above average potato salad, this is it. I always get emails requesting this salad after I have served it. Ingredients:
2 pound small potato either red (perferred) or white |
7 hard boiled eggs |
1 cup diced celery |
2 tbsp diced dill pickles |
3/4 to 1 cup mayo |
1/4 to 1/3 cup sour cream |
2 tbsp dill pickle juice |
1 tbsp yellow mustard |
1 tbsp dijon mustard |
2 tsp dried dill |
1 tsp paprika |
pinch of cayene pepper |
1/2 tsp salt |
pinch of pepper |
Directions:
1. cut potatoes into quarters and cook till fork tender. (i like to steam my potatoes when making a salad with them 2. while potatoes are cooking mix everything except the eggs in a large boil. 3. Add 5 of the eggs diced into the mix. 4. Chill in the fridge. 5. Allow cooked potatoes to cool slightly then add to chilled mix 6. slice last 2 eggs and fan on top. 7. put in fridge overnight. |
