We have this potato salad in the summer and at family reunions. It always makes me think of my mom and grandma.
Ingredients:
5 pounds of red potatoes
8 eggs
miracle whip or spin blend (mayo) – to taste
yellow mustard – to taste
3/4 to a small jar of sweet pickles
3-4 large celery stalks
small onion
jar of pimento
Directions:
1. Peel potatoes and slice in quarters, boil til soft in salted water.
2. Place potatoes in a large Tupperware bowl and run a knife through them to cut them up.
3. Boil eggs and dice, add to potatoes.
4. Cut into small pieces celery, pickles and onion, and add with pimento to potatoes and eggs.
5. Add spin blend and mustard to taste. Make a couple days ahead and refrigerate.
