Easy microwave recipe for one. Ingredients:
4 ounces new potatoes, unpeeled |
1/4 cup mayonnaise |
1 tablespoon green bell pepper, chopped |
1/8 teaspoon salt |
1 dash white pepper |
1 dash cinnamon |
1 dash nutmeg |
Directions:
1. Choose new potatoes that are uniform in size. 2. Wash potatoes. 3. Place potatoes in a 1-pint microwave-safe container. 4. Cover with lid. 5. In a microwave oven, cook for 2 minutes (in a 700-watt oven). 6. Adjust to the wattage of your microwave. 7. Cool potatoes enough to handle. 8. Peel potatoes then dice. 9. Place diced potatoes in a small bowl. 10. Mix mayonnaise, green bell pepper, salt, white pepper, cinnamon and nutmeg. 11. Add to potatoes then mix gently. 12. Chill before serving. 13. Store potato salad leftovers in the refrigerator. |
