This dressing used for the potatoes can also be used in macaroni salad. Ingredients:
6 medium potatoes |
1 small onion, chopped fine |
1 cup celery, chopped |
1 teaspoon celery seed |
1 teaspoon salt |
4 hard-boiled eggs, diced |
2 eggs, well beaten |
3/4 cup sugar |
1 teaspoon cornstarch |

1/4-1/2 cup vinegar |
1/2 cup cream |
1 teaspoon mustard |
3 tablespoons butter, softened |
1 cup salad dressing |
Directions:
1. Potatoes: Cook potatoes in their jackets until soft. 2. Peel and dice. 3. Mix potatoes gently with the remaining five ingredients. 4. Pour dressing over and stir. 5. Dressing: Mix eggs with sugar, cornstarch and salt. 6. Add vinegar, cream and mustardd. 7. Cook until thickened. 8. Remove from heat and beat in butter. 9. Add salad dressing and mix until smooth. 10. Fold into potato mixture. |
