My mom's potato salad Ingredients:
5 lbs peeled cut potatoes |
1/4 cup white vinegar |
1 tablespoon mustard |
1/4 cup brown sugar |
2 hard-boiled eggs, diced |
1/4 cup onion, minced |
1/4 cup pickle relish, sweet & dill |
1/2 cup celery |
1/2 cup carrot |
1/2 cup miracle whip |
Directions:
1. peel, cut, boil potatoes to a semi-mush. 2. rinse and put in bowl. 3. separately mix vinegar, mustard, brown sugar and bring to a boil until sugar melts. 4. pour this mix over potatoes. 5. combine eggs, onion, relish, celery, carrots, miracle whip. 6. fridge overnight. |
