This was created when I was making potato salad and didn't have the ingredients I normally added. I like to have color in my potato salad and always added a few radishes to add some red in the mix. I was out of radishes so I added what I had - tomatoes. I received rave reviews for the salad that day and also the next time when I included the missing radishes in addition to the tomatoes. I hope you enjoy this recipe as much as my family and all our friends do. Ingredients:
6 large potatoes, boiled, peeled and diced |
8 eggs, hardboiled and shelled |
1 large tomato, diced |
2 large dill pickles, chopped |
6 -8 radishes, sliced and quartered |
3 stalks celery, diced small |
4 -6 green onions, sliced |
2 -3 cups mayonnaise |
2 -3 tablespoons mustard |
splash pickle juice |
paprika |
Directions:
1. In large mixing bowl, mix potatoes, tomato, pickles, radishes, celery, green onions, mayonnaise, mustard and pickle juice. 2. Chop 5 eggs and add to salad and mix. If necessary add additional mayonnaise and/or pickle juice so that salad is creamy. 3. Slice remaining eggs and garnish top of salad. Sprinkle with Paprika. |
