This is my Great-Grandmother's potato salad recipe. I have made a couple of changes based on personal taste preferences. I fry the bacon until crisp instead of boiling it, and I don't use peppers and pickles in it. The preparation time and serving size are guestimates Ingredients:
4 cups boiled potatoes, chilled and diced |
1 small onion, diced |
3 hard-boiled eggs, diced |
1/2 cup dice celery |
1 cup nancy's boiled salad dressing |
3 slices boiled bacon |
3 tablespoons jalapeno peppers, diced (to taste) |
1/8 cup sweet gherkin, diced (to taste) |
1 teaspoon salt (to taste) |
Directions:
1. Mix all ingredients together and let stand until well chilled before serving. If warm potato salad is desired mix when potatoes are warm and add bcon with drippings when just cooked. |
