My kids really like these. Sometimes we sprinkle shredded cheese on top. YUM!! Ingredients:
2 eggs, separated |
2 cups mashed potatoes |
2 tablespoons grated parmesan cheese |
1 tablespoon finely chopped fresh parsley |
1/4 cup finely chopped onion |
1/8-1/4 teaspoon garlic powder |
1 teaspoon salt |
1/2 teaspoon pepper |
2 -3 tablespoons butter or 2 -3 tablespoons margarine, melted |
Directions:
1. In a bowl, beat egg yolks until frothy. 2. Add next 6 ingredients; mix well. 3. Beat egg whites until stiff; fold into potato mixture. 4. Brush 8 small ramekins with melted butter. 5. Spoon potato mixture evenly into ramekins. 6. Brush remaining butter over potatoes. 7. Bake at 375 degrees for 30-35 minutes or until lightly browned. 8. Serve immediately. |
