The most unusual dessert pie I've ever come across. You will not believe the flavor of mashed potatoes in a dessert! Ingredients:
1 cup milk |
1/2 cup sugar |
zest of 1 lemon |
juice of 1 lemon |
1 1/2 cups leftover mashed potatoes |
2 egg yolks |
2 tablespoons melted butter |
pinch of salt |
2 egg whites, beaten to soft peak |
nutmeg |
Directions:
1. Preheat oven to 475 degrees F. 2. Butter the bottom and sides of a 9 pie pan. 3. Mix together the milk, sugar, lemon zest and lemon juice. 4. Add the mashed potatoes and eggs yolks. 5. Mix well. 6. Add 2 tablespoons melted butter and a pinch of salt. 7. Mix well. 8. Fold in the soft-peak egg whites gently. 9. Sprinkle with nutmeg (now OR later). 10. Bake for 10 minutes at 475 degrees. 11. Reduce oven temperature to 350 degrees F. 12. Bake another 20 minutes. |
