Great side for fish, creamed chicken, etc. Ingredients:
2 c left over cold mashed potatoes |
1 egg, beaten |
1/4 c onion, finely chopped |
1/4 c celery, finely chopped |
1/2 t salt |
1/8 t pepper |
2 t margarine, melted (i use nuco; it does not burn or butter crisco) |
Directions:
1. In medium mixing bowl, combine mashed potatoes, beaten egg, onion, celery, salt, and pepper. 2. Mix well. 3. Measure about 1/3 c of the potato mixture, make into a pattie and repeat 5 more times 4. In a large skillet, brown patties slowly in margarine about 5 minutes or till golden brown on each side. 5. Makes 6 paties. |
