Fun way to make potatoes as a side dish. Double recipe for more depending on how big you make them. Ingredients:
2 cups cold mashed potatoes |
1/2 cup flour |
2/3 cup milk |
3 eggs, beaten |
2 teaspoons baking powder |
1 onion, chopped |
2 tablespoons parsley, diced |
salt and pepper to taste |
butter for frying |
sour cream for serving (i make paprika sour cream for this) |
Directions:
1. In a bowl, mix together all the ingredients except butter and sour cream. 2. In a skillet, heat to medium-high and melt butter. 3. Drop potato mixture by the spoonful into the melted butter and fry, turning once, to a golden brown. 4. Serve with sour cream (I add paprika to the sour cream and mix it) |
