These are a nice compliment to a side salad for lunch. Ingredients:
4 medium potatoes, peeled and cubed |
2 tablespoons cream cheese |
2 tablespoons flour |
1/4 grated onion |
1/4 green onion |
salt & pepper |
3 -4 tablespoons vegetable oil |
2 eggs |
Directions:
1. Place the potatoes in a small pot, cover w/ water, bring to a boil for 15-20 minutes. 2. Drain, add the cream cheese, mash, then cool to room temp or refrigerate overnight. 3. In a large bowl, throughly combine the mashed potatoes, flour, onion, green onion and salt & pepper. 4. Heat the oil in a large skillet over a med-high heat. Shape scoops of the potato mixture into small patties and fry, approximately 1-2 minutes, until browned and crispy. 5. Flip over and brown the other side. 6. Remove to paper towels. Serve Hot. |
